Pork Chops have become a delicacy in the Sorrels household. The combination of our heritage breed pigs raised on pasture in a low stress environment makes our pork chops the best we’ve ever had. We bet you’ve never had anything like it.


All our chops are bone-in, to provide additional flavor and preserve the natural moisture in our pork. Choose a full fat cap to trim fat to the desired amount, or an already trimmed chop. Pastured pork fat melts like butter, and has a rich, velvety smooth finish you will crave. 


Chops are 2 per packages with these package sizes available: 


1/2" Sandwich - Tenderized & Boneless

3/4" Petite - 1 - 1.25 lb - Bone-In

1.5" Griller - 1.5 - 1.75 lb - Bone-In

2" American Cut Stuffable Chops - Boneless

Pork Chops

  • We always suggest pulling your chops off the heat at 135° F and letting them come up to 140° F to 145° F with residual heat.

    WARNING:  If all fat is retained on the chop, watch your grill closely for flare ups!
